Ingredients:  

Main Ingredients

  • 4 links Veggie Sausage sliced
  • 1 cup Chopped Onions
  • 2 cups Diced Tomatoes canned
  • 1 cup Vegetable Broth
  • 2 cups Chopped Bell Peppers
  • 1 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the sliced veggie sausage, chopped onions, diced tomatoes, vegetable broth, and chopped bell peppers.
  • Add garlic powder, dried oregano, salt, and black pepper. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 45 minutes, or until the veggies are tender and the casserole is bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be stored in the fridge for up to 3 days. Reheat before serving.
