Instructions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine shredded potatoes, sour cream, cream of chicken soup, and shredded cheddar cheese.
Spread the mixture evenly into a baking dish.
In a small bowl, mix crushed cornflakes with melted butter. Sprinkle this mixture over the top of the casserole.
Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is bubbly.
Notes:
For a twist, try adding cooked bacon bits or diced ham to the mixture.
