Ingredients:  

Main Ingredients

  • 6 cups shredded potatoes frozen or fresh
  • 2 cups sour cream
  • 1 can cream of chicken soup 10.5 oz can
  • 2 cups shredded cheddar cheese
  • 1 cup crushed cornflakes
  • 1/4 cup melted butter

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded potatoes, sour cream, cream of chicken soup, and shredded cheddar cheese.
  • Spread the mixture evenly into a baking dish.
  • In a small bowl, mix crushed cornflakes with melted butter. Sprinkle this mixture over the top of the casserole.
  • Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is bubbly.

Notes:

For a twist, try adding cooked bacon bits or diced ham to the mixture.
