Ingredients:

  • 4 cups Zucchini, sliced
  • 1 cup Stuffing mix
  • 1 cup Sour cream
  • 1 can Cream of chicken soup
  • 1 cup Shredded cheddar cheese

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine zucchini, stuffing mix, sour cream, and cream of chicken soup.
  • Transfer the mixture to a baking dish and spread evenly.
  • Sprinkle shredded cheddar cheese on top.
  • Bake in the preheated oven for 40 minutes, or until the top is golden brown and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

This casserole is a great way to use up extra zucchini from the garden.
