Ingredients:

  • 1 cup Butternut Squash peeled and cubed
  • 1 cup Rice uncooked
  • 2 cups Vegetable Broth
  • 1 cup Cheddar Cheese shredded
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 tbsp Olive Oil

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine butternut squash, rice, vegetable broth, salt, and pepper.
  • Transfer the mixture to a baking dish and cover with foil.
  • Bake for 30 minutes, then remove the foil and sprinkle with cheddar cheese.
  • Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add other vegetables like spinach or bell peppers for extra flavor.
