Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine butternut squash, rice, vegetable broth, salt, and pepper.
Transfer the mixture to a baking dish and cover with foil.
Bake for 30 minutes, then remove the foil and sprinkle with cheddar cheese.
Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add other vegetables like spinach or bell peppers for extra flavor.
