onion, chopped

butter

salt and pepper
Instructions:
Preheat your oven to 350°F (175°C).
In a large pot, cook the squash and onion in boiling water until tender, about 10 minutes. Drain well.
In a mixing bowl, combine the cooked squash and onion, sour cream, and half of the shredded cheddar cheese. Mix well.
Transfer the mixture to a greased baking dish. Top with the remaining cheese and crushed crackers.
Dot with butter and bake in the preheated oven for 30 minutes, or until the top is golden brown.
Season with salt and pepper to taste before serving.
Notes:
This casserole can be made ahead and refrigerated until ready to bake.
