Ingredients:

  • 4 cups sliced squash
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup crushed crackers
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large pot, cook the squash and onion in boiling water until tender, about 10 minutes. Drain well.
  • In a mixing bowl, combine the cooked squash and onion, sour cream, and half of the shredded cheddar cheese. Mix well.
  • Transfer the mixture to a greased baking dish. Top with the remaining cheese and crushed crackers.
  • Dot with butter and bake in the preheated oven for 30 minutes, or until the top is golden brown.
  • Season with salt and pepper to taste before serving.

Notes:

This casserole can be made ahead and refrigerated until ready to bake.
