Instructions:
Preheat your oven to 350°F (175°C).
Place the pork roast in a baking dish.
Add the chopped onions, sliced carrots, and chopped potatoes around the pork.
Pour the chicken broth over the vegetables and pork.
Season with salt and black pepper.
Cover the baking dish with foil and bake for 1.5 hours.
Remove the foil and bake for an additional 15 minutes to brown the top.
Let it rest for 10 minutes before serving.
Notes:
