Ingredients:  

Main Ingredients

  • 2 lbs Pork roast
  • 1 cup Chopped onions
  • 2 cups Sliced carrots
  • 2 cups Chopped potatoes
  • 2 cups Chicken broth
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Place the pork roast in a baking dish.
  • Add the chopped onions, sliced carrots, and chopped potatoes around the pork.
  • Pour the chicken broth over the vegetables and pork.
  • Season with salt and black pepper.
  • Cover the baking dish with foil and bake for 1.5 hours.
  • Remove the foil and bake for an additional 15 minutes to brown the top.
  • Let it rest for 10 minutes before serving.

Notes:

For a richer flavor, you can marinate the pork roast overnight with your favorite spices.
