Instructions:
Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and cook for another 5 minutes.
In a baking dish, layer half of the crushed tortilla chips, followed by the beef mixture, and then half of the shredded cheese.
Repeat the layers with the remaining tortilla chips, beef mixture, and cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving. Top with sour cream if desired.
Notes:
This casserole can be made ahead of time and refrigerated until ready to bake.
