Ingredients:

  • 1 cup uncooked rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup salsa

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Cook the rice according to package instructions.
  • In a large skillet, cook the ground beef or turkey until browned. Drain any excess fat.
  • Add the taco seasoning to the meat and cook according to the packet instructions.
  • In a large mixing bowl, combine the cooked rice, seasoned meat, black beans, corn, and salsa. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the shredded cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

You can add toppings like sour cream, avocado, or cilantro if you like.
