sour cream

cream of chicken soup

Ritz crackers, crushed

melted butter
Instructions:
Preheat oven to 350°F (175°C).
In a large pot, boil squash and onion until tender. Drain well.
In a mixing bowl, combine squash, onion, cheddar cheese, sour cream, and cream of chicken soup. Mix well.
Pour mixture into a baking dish.
In a separate bowl, mix crushed Ritz crackers with melted butter. Sprinkle over the squash mixture.
Bake for 25 minutes or until the top is golden brown.
Notes:
For a vegetarian version, use cream of mushroom soup instead of cream of chicken soup.
