Ingredients:  

Main Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes with green chilies
  • 1 bell pepper diced
  • 1 red onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh cilantro chopped (optional)

Instructions: 

  • Preheat oven to 375°F (190°C).
  • Cook quinoa in vegetable broth according to package instructions.
  • In a large bowl, combine cooked quinoa, black beans, corn, diced tomatoes, bell pepper, red onion, garlic, cumin, chili powder, and paprika. Mix well.
  • Transfer mixture to a greased casserole dish.
  • Top with shredded cheddar cheese.
  • Bake for 25-30 minutes, until cheese is melted and bubbly.
  • Garnish with fresh cilantro if desired.

Notes:

Feel free to add more veggies or adjust the spices to your taste.
