Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, heat the olive oil over medium heat. Add the shrimp and cook until pink, about 3-4 minutes. Remove from heat.
In a mixing bowl, combine the shrimp, squash, shredded cheese, salt, and black pepper.
Transfer the mixture to a baking dish. Top with bread crumbs.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
Let it cool for a few minutes before serving. Enjoy!

Feel free to add other vegetables like bell peppers or zucchini.
