Ingredients:  

Main Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups sliced squash
  • 1 cup shredded cheese
  • 1 cup bread crumbs
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat the olive oil over medium heat. Add the shrimp and cook until pink, about 3-4 minutes. Remove from heat.
  • In a mixing bowl, combine the shrimp, squash, shredded cheese, salt, and black pepper.
  • Transfer the mixture to a baking dish. Top with bread crumbs.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add other vegetables like bell peppers or zucchini.
