Instructions:
Preheat oven to 350°F (175°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender.
Stir in diced tomatoes, cooked rice, and Cajun seasoning. Mix well.
Layer chopped cabbage in a baking dish. Pour the beef mixture over the cabbage.
Cover with foil and bake for 30 minutes. Remove foil, sprinkle with cheese, and bake for an additional 10 minutes.
Let it cool for a few minutes before serving.
Notes:
Feel free to adjust the level of Cajun seasoning to your taste.
