Ingredients:  

Main Ingredients

  • 4 cups Shredded coleslaw mix
  • 1 cup Mayonnaise
  • 1/4 cup Apple cider vinegar
  • 1/4 cup Sugar
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Shredded cheddar cheese
  • 1 cup Crushed Ritz crackers
  • 1/2 cup Melted butter

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the shredded cheddar cheese over the top of the coleslaw mixture.
  • In a separate bowl, combine the crushed Ritz crackers and melted butter. Mix until the crackers are well coated.
  • Sprinkle the cracker mixture evenly over the top of the casserole.
  • Bake in the preheated oven for 30 minutes, or until the top is golden brown and the casserole is heated through.
  • Remove from the oven and let it cool slightly before serving. Enjoy!

Notes:

This coleslaw casserole is a great side dish for any meal. You can also add some cooked chicken or ham to make it a complete meal.
