Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cups cooked rice
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion and bell pepper to the skillet. Cook until softened.
  • Stir in cooked rice, diced tomatoes, and tomato sauce. Season with salt and pepper.
  • Transfer mixture to a casserole dish. Top with shredded cheddar cheese.
  • Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.

Notes:

Feel free to add other vegetables like corn or peas for extra flavor and nutrition.
