Salt and pepper to taste
Instructions:
Preheat oven to 350°F (175°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion and bell pepper to the skillet. Cook until softened.
Stir in cooked rice, diced tomatoes, and tomato sauce. Season with salt and pepper.
Transfer mixture to a casserole dish. Top with shredded cheddar cheese.
Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
Notes:
