Ingredients:  

Main Ingredients

  • 1 pound chorizo sausage cooked and crumbled
  • 10 large eggs
  • 1 cup milk
  • 1 cup shredded cheese cheddar or your choice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced bell peppers optional
  • 1 cup diced onions optional

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the eggs and milk.
  • Add the cooked chorizo, shredded cheese, salt, and pepper to the egg mixture. Stir to combine.
  • If using, add the diced bell peppers and onions. Mix well.
  • Pour the mixture into a greased baking dish.
  • Bake in the preheated oven for 45 minutes, or until the eggs are set and the top is golden brown.
  • Let the casserole cool for a few minutes before slicing and serving.

Notes:

Feel free to add other veggies like spinach or mushrooms for extra flavor.
