Ingredients:  

Main Ingredients

  • 2 cups Potatoes, boiled and mashed
  • 1 cup Peas, cooked
  • 1 cup Carrots, diced and cooked
  • 1 cup Onion, finely chopped
  • 2 tbsp Oil
  • 1 tsp Cumin seeds
  • 1 tsp Garam masala
  • 1 tsp Turmeric powder
  • 1 tsp Salt to taste
  • 1 cup Cilantro, chopped
  • 2 cups Phyllo dough sheets thawed

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat oil over medium heat. Add cumin seeds and let them sizzle.
  • Add chopped onions and sauté until golden brown.
  • Add turmeric powder, garam masala, and salt. Stir well.
  • Add boiled and mashed potatoes, cooked peas, and carrots. Mix everything together.
  • Remove from heat and stir in chopped cilantro.
  • Layer the bottom of a baking dish with phyllo dough sheets. Add the potato mixture on top and spread evenly.
  • Cover with another layer of phyllo dough sheets.
  • Bake in the preheated oven for 30-40 minutes, or until the top is golden and crispy.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add more vegetables or spices to suit your taste.
