Ingredients:  

Main Ingredients

  • 1 lb ground beef lean
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup low-fat shredded cheese
  • 1 cup chopped bell pepper
  • 1 cup chopped zucchini
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add onion and garlic to the skillet. Cook until softened.
  • Stir in diced tomatoes, bell pepper, zucchini, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  • Transfer mixture to a baking dish. Top with shredded cheese.
  • Bake in preheated oven for 25-30 minutes, until cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add other vegetables like spinach or mushrooms.
