Instructions:
Preheat oven to 350°F (175°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add onion and garlic to the skillet. Cook until softened.
Stir in diced tomatoes, bell pepper, zucchini, oregano, basil, salt, and pepper. Simmer for 10 minutes.
Transfer mixture to a baking dish. Top with shredded cheese.
Bake in preheated oven for 25-30 minutes, until cheese is melted and bubbly.
Let cool for a few minutes before serving.
Notes:
Feel free to add other vegetables like spinach or mushrooms.
