uncooked rice
white or brown

black beans
drained and rinsed

corn

shredded cheese
cheddar or Mexican blend

salsa

cumin

chili powder
to taste
salt and pepper
Instructions:
Preheat your oven to 350°F (175°C).
Cook the rice according to package instructions.
In a large mixing bowl, combine the cooked rice, black beans, corn, 1 cup of shredded cheese, salsa, cumin, chili powder, salt, and pepper.
Transfer the mixture to a baking dish and spread it out evenly.
Sprinkle the remaining 1 cup of shredded cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add more veggies or use different types of beans.
