In a large pot, bring the water to a boil. Add the salt and slowly whisk in the grits. Reduce the heat to low and cook, stirring frequently, until thickened, about 5-7 minutes.
Remove the pot from heat and stir in the butter, milk, and cheese until melted and well combined.
In a small bowl, beat the eggs and then slowly add them to the grits mixture, stirring constantly to prevent the eggs from scrambling.
Pour the mixture into a greased baking dish and bake for 30-35 minutes, or until set and golden on top.
Let the casserole cool for a few minutes before serving. Enjoy!
