Ingredients:

  • 1 cup grits quick-cooking
  • 4 cups water
  • 1 cup cheddar cheese shredded
  • 1/2 cup milk
  • 2 tbsp butter unsalted
  • 2 eggs beaten
  • 1 tsp salt
  • 1/2 tsp black pepper ground

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring the water to a boil. Add the salt and slowly whisk in the grits. Reduce the heat to low and cook, stirring frequently, until thickened, about 5-7 minutes.
  • Remove the pot from heat and stir in the butter, milk, and cheese until melted and well combined.
  • In a small bowl, beat the eggs and then slowly add them to the grits mixture, stirring constantly to prevent the eggs from scrambling.
  • Pour the mixture into a greased baking dish and bake for 30-35 minutes, or until set and golden on top.
  • Let the casserole cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add cooked bacon or sausage for extra flavor.
