Ingredients:

  • 2 cups Cooked Rice
  • 1 cup Frozen Mixed Vegetables
  • 2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 2 pcs Eggs beaten
  • 1 cup Cooked Chicken diced
  • 1 tbsp Green Onions chopped

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked rice, frozen mixed vegetables, soy sauce, sesame oil, beaten eggs, cooked chicken, and chopped green onions.
  • Transfer the mixture to a greased baking dish and spread it out evenly.
  • Bake in the preheated oven for 30 minutes, or until the top is golden brown and the casserole is heated through.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is a great way to use up leftover rice and veggies. Feel free to substitute with any protein you like.
