Ingredients:  

Main Ingredients

  • 1 cup rice
  • 2 cups water
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • to taste Salt and pepper
  • 1 tbsp olive oil

Instructions: 

  • Preheat oven to 375°F (190°C).
  • Cook rice according to package instructions.
  • In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  • Add diced tomatoes, salt, and pepper. Cook for 5 minutes.
  • In a baking dish, combine cooked rice and tomato mixture. Top with shredded cheese.
  • Bake for 20 minutes or until cheese is melted and bubbly.

Notes:

Feel free to add your favorite vegetables or proteins to make it a complete meal.
