Instructions:
Preheat oven to 375°F (190°C).
Cook rice according to package instructions.
In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
Add diced tomatoes, salt, and pepper. Cook for 5 minutes.
In a baking dish, combine cooked rice and tomato mixture. Top with shredded cheese.
Bake for 20 minutes or until cheese is melted and bubbly.

Feel free to add your favorite vegetables or proteins to make it a complete meal.
