Ingredients:  

Main Ingredients

  • 2 cups California blend vegetables frozen
  • 1 cup rice cooked
  • 1 cup cheddar cheese shredded
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, combine the soup, milk, salt, and pepper.
  • Add the cooked rice, California blend vegetables, and half of the shredded cheese. Mix well.
  • Transfer the mixture to a baking dish and spread evenly.
  • Sprinkle the remaining cheese on top.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add cooked chicken or turkey for a non-vegetarian version.
