Ingredients:

  • 1 large Butternut Squash peeled and cubed
  • 1/2 cup Brown Sugar
  • 1/4 cup Butter melted
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 cup Pecans chopped
  • 1 tsp Vanilla Extract

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large mixing bowl, combine butternut squash, brown sugar, melted butter, cinnamon, nutmeg, and vanilla extract.
  • Transfer the mixture to a baking dish and spread evenly.
  • Sprinkle chopped pecans over the top.
  • Bake in the preheated oven for 45 minutes or until the squash is tender.

Notes:

For a vegan version, substitute butter with coconut oil.
