Instructions:
Preheat oven to 375°F (190°C).
In a large mixing bowl, combine butternut squash, brown sugar, melted butter, cinnamon, nutmeg, and vanilla extract.
Transfer the mixture to a baking dish and spread evenly.
Sprinkle chopped pecans over the top.
Bake in the preheated oven for 45 minutes or until the squash is tender.
Notes:
For a vegan version, substitute butter with coconut oil.
