Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk together the eggs and milk.
Add the chopped asparagus, bell peppers, zucchini, salt, and pepper to the bowl. Mix well.
Pour the mixture into a greased baking dish.
Sprinkle the shredded mozzarella cheese evenly on top.
Bake in the preheated oven for 30 minutes, or until the casserole is set and the top is golden brown.
Let it cool for a few minutes before serving. Enjoy!
