Ingredients:  

Main Ingredients

  • 2 cups chopped asparagus
  • 1 cup chopped bell peppers
  • 1 cup chopped zucchini
  • 1 cup shredded mozzarella cheese
  • 1 cup milk
  • 3 eggs
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, whisk together the eggs and milk.
  • Add the chopped asparagus, bell peppers, zucchini, salt, and pepper to the bowl. Mix well.
  • Pour the mixture into a greased baking dish.
  • Sprinkle the shredded mozzarella cheese evenly on top.
  • Bake in the preheated oven for 30 minutes, or until the casserole is set and the top is golden brown.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

You can add other spring vegetables like peas or spinach for extra flavor.
