Ingredients:

  • 1 lb ground lamb
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 cup Greek yogurt
  • 1 cup diced tomatoes
  • 1 cup crumbled feta cheese
  • 2 cups cooked rice

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground lamb over medium heat until browned. Drain excess fat.
  • Add the diced onions and minced garlic to the skillet. Cook until the onions are translucent.
  • Stir in the dried oregano and ground cumin. Cook for another minute.
  • In a mixing bowl, combine the cooked lamb mixture, Greek yogurt, diced tomatoes, crumbled feta cheese, and cooked rice.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 30-40 minutes, until the top is golden and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

This gyro casserole is perfect for a quick weeknight dinner or a family gathering. Serve with a side salad for a complete meal.
