Ingredients:  

Main Ingredients

  • 1 cup wild rice
  • 2 cups mushrooms, sliced
  • 1 cup vegetable broth
  • 1 cup milk
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat the oven to 350°F (175°C).
  • Cook the wild rice according to package instructions.
  • In a large mixing bowl, combine cooked wild rice, mushrooms, vegetable broth, milk, onion, garlic, olive oil, salt, and pepper.
  • Transfer the mixture to a baking dish.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and the casserole is bubbling.
  • Let it cool for a few minutes before serving.

Notes:

This casserole can be made ahead and reheated.
