Ingredients:

  • 4 large potatoes, peeled and grated
  • 1 large onion, grated
  • 2 large eggs, beaten
  • 0.25 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup vegetable oil (for frying)
  • 1 cup sour cream (optional, for serving)
  • 0.25 cup chopped chives (optional, for garnish)

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix grated potatoes, grated onion, beaten eggs, flour, salt, and pepper.
  • Heat vegetable oil in a large skillet over medium-high heat.
  • Drop spoonfuls of the potato mixture into the skillet, flattening them with a spatula.
  • Fry until golden brown on both sides, about 3-4 minutes per side.
  • Transfer fried latkes to a baking dish.
  • Bake in the preheated oven for 20-25 minutes until cooked through.
  • Serve hot with sour cream and chives, if desired.

Notes:

For a crispier texture, you can fry the latkes a bit longer before baking.
