Ingredients:

  • 6 cups mashed potatoes prepared
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup bread crumbs
  • 2 tbsp butter melted

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the mashed potatoes, sour cream, cheddar cheese, green onions, salt, and black pepper. Mix well.
  • Transfer the mixture to a greased baking dish.
  • In a small bowl, combine the bread crumbs and melted butter. Sprinkle this mixture evenly over the top of the potato mixture.
  • Bake in the preheated oven for 45-60 minutes, or until the top is golden brown and the casserole is heated through.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be made a day ahead and refrigerated until ready to bake.
