Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
Stir in tomato sauce, dried oregano, salt, and black pepper. Simmer for 10 minutes.
In a baking dish, layer half of the sliced eggplant, then half of the beef mixture. Repeat layers.
Top with shredded mozzarella cheese.
Bake in preheated oven for 30-35 minutes, until cheese is bubbly and golden.
Notes:
Let the casserole sit for a few minutes before serving to set.
