Ingredients:  

Main Ingredients

  • 1 large eggplant sliced
  • 1 lb ground beef
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can tomato sauce (15 oz)
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
  • Stir in tomato sauce, dried oregano, salt, and black pepper. Simmer for 10 minutes.
  • In a baking dish, layer half of the sliced eggplant, then half of the beef mixture. Repeat layers.
  • Top with shredded mozzarella cheese.
  • Bake in preheated oven for 30-35 minutes, until cheese is bubbly and golden.

Notes:

Let the casserole sit for a few minutes before serving to set.
