Ingredients:  

Main Ingredients

  • 1 head Cauliflower riced
  • 1 cup Tomato Sauce
  • 1 cup Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Cheddar Cheese shredded
  • 1 tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the riced cauliflower, tomato sauce, black beans, corn, olive oil, cumin, chili powder, garlic powder, salt, and pepper. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the shredded cheddar cheese evenly over the top.
  • Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

Feel free to add some chopped cilantro or a squeeze of lime juice on top before serving for extra flavor.
