Ingredients:

  • 1 lb ground beef
  • 1 can kidney beans drained and rinsed
  • 1 can diced tomatoes with juice
  • 1 packet chili seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 box cornbread mix prepared according to package instructions

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add kidney beans, diced tomatoes, and chili seasoning mix to the skillet. Stir to combine and let simmer for 10 minutes.
  • Transfer the chili mixture to a baking dish. Sprinkle shredded cheddar cheese on top.
  • Prepare cornbread mix according to package instructions and spread it evenly over the chili mixture.
  • Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add more veggies like bell peppers or corn for extra flavor.
