Instructions:
Preheat oven to 375°F (190°C).
In a mixing bowl, combine chicken, bell peppers, onion, garlic, rice, chicken broth, and Cajun seasoning.
Pour mixture into a baking dish and cover with foil.
Bake for 30 minutes.
Remove foil, sprinkle with cheddar cheese, and bake for an additional 10 minutes or until cheese is melted and bubbly.
Let it cool for a few minutes before serving.

Feel free to add more veggies or adjust the seasoning to your taste.
