Ingredients:  

Main Ingredients

  • 1 lb Chicken Breast diced
  • 1 cup Bell Peppers chopped
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Rice uncooked
  • 2 cups Chicken Broth
  • 1 tbsp Cajun Seasoning
  • 1 cup Cheddar Cheese shredded

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine chicken, bell peppers, onion, garlic, rice, chicken broth, and Cajun seasoning.
  • Pour mixture into a baking dish and cover with foil.
  • Bake for 30 minutes.
  • Remove foil, sprinkle with cheddar cheese, and bake for an additional 10 minutes or until cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add more veggies or adjust the seasoning to your taste.
