Ingredients:  

Main Ingredients

  • 4 cups Zucchini, sliced
  • 1 cup Sour cream
  • 1 can Cream of chicken soup
  • 1 cup Shredded cheddar cheese
  • 1 sleeve Ritz crackers, crushed
  • 1/4 cup Butter, melted

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, combine sliced zucchini, sour cream, cream of chicken soup, and shredded cheddar cheese.
  • Transfer the mixture to a baking dish.
  • In a separate bowl, mix crushed Ritz crackers with melted butter. Sprinkle over the zucchini mixture.
  • Bake in the preheated oven for 30 minutes, or until the top is golden brown and the casserole is bubbly.

Notes:

For a vegetarian version, use cream of mushroom soup instead of cream of chicken soup.
