Instructions:
Preheat oven to 350°F (175°C).
In a mixing bowl, combine sliced zucchini, sour cream, cream of chicken soup, and shredded cheddar cheese.
Transfer the mixture to a baking dish.
In a separate bowl, mix crushed Ritz crackers with melted butter. Sprinkle over the zucchini mixture.
Bake in the preheated oven for 30 minutes, or until the top is golden brown and the casserole is bubbly.
Notes:
For a vegetarian version, use cream of mushroom soup instead of cream of chicken soup.
