Instructions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the potatoes, sour cream, cheddar cheese, and cream of chicken soup. Mix well.
Season with salt and pepper to taste.
Transfer the mixture to a greased baking dish.
In a small bowl, mix the crushed cornflakes with the melted butter. Sprinkle this over the potato mixture.
Bake in the preheated oven for 45 minutes, or until the top is golden brown and the potatoes are tender.
Let it cool for a few minutes before serving. Enjoy!
