Ingredients:  

Main Ingredients

  • 6 cups potatoes, peeled and cubed
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1 cup crushed cornflakes
  • 0.5 cup melted butter
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the potatoes, sour cream, cheddar cheese, and cream of chicken soup. Mix well.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a greased baking dish.
  • In a small bowl, mix the crushed cornflakes with the melted butter. Sprinkle this over the potato mixture.
  • Bake in the preheated oven for 45 minutes, or until the top is golden brown and the potatoes are tender.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is perfect for family gatherings or potlucks. You can also add some cooked bacon or ham for extra flavor.
