Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
Add the sliced sausage to the skillet and cook until browned.
In a baking dish, layer the diced potatoes, sauerkraut, and sausage mixture.
Sprinkle with salt and pepper, then top with shredded cheddar cheese.
Bake in the preheated oven for 40 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
