Ingredients:  

Main Ingredients

  • 6 leftover tamales chopped
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup corn canned or frozen
  • 1 cup black beans canned, drained and rinsed

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine chopped tamales, corn, black beans, and salsa.
  • Spread the mixture evenly in a baking dish.
  • Top with shredded cheese.
  • Bake for 30 minutes or until the cheese is melted and bubbly.
  • Serve hot with a dollop of sour cream on top.

Feel free to add any other leftover veggies you have on hand.
