Ingredients:  

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 tbsp butter
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a pot, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  • In a mixing bowl, combine the cooked quinoa, shredded cheddar cheese, milk, butter, salt, and black pepper. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 20 minutes or until the top is golden and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

Feel free to add some veggies like broccoli or spinach for extra nutrition.
