Instructions:
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the chopped apricots, sugar, flour, baking powder, and salt.
Add the milk and vanilla extract to the dry ingredients and mix well.
Pour the melted butter into a baking dish, then pour the batter over the butter. Do not stir.
Bake for 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Let the casserole cool slightly before serving. Enjoy!
Notes:
This apricot casserole is best served warm. You can also add a scoop of vanilla ice cream on top for an extra treat.
