Ingredients:  

Main Ingredients

  • 2 cups dried apricots chopped
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup butter melted

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the chopped apricots, sugar, flour, baking powder, and salt.
  • Add the milk and vanilla extract to the dry ingredients and mix well.
  • Pour the melted butter into a baking dish, then pour the batter over the butter. Do not stir.
  • Bake for 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Let the casserole cool slightly before serving. Enjoy!

Notes:

This apricot casserole is best served warm. You can also add a scoop of vanilla ice cream on top for an extra treat.
