Ingredients:  

Main Ingredients

  • 2 cups Leftover Al Pastor
  • 1 cup Cooked Rice
  • 1 cup Shredded Cheese
  • 1 cup Salsa
  • 1 cup Black Beans drained and rinsed
  • 1 cup Corn drained
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • to taste Salt and Pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the leftover Al Pastor, cooked rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the shredded cheese on top.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

You can add more veggies or adjust the spices to your liking.
