Instructions:
Preheat your oven to 375°F (190°C).
In a skillet over medium heat, cook the ground bison until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
Stir in the diced tomatoes, frozen peas, cooked quinoa, salt, and black pepper. Mix well.
Transfer the mixture to a baking dish. Top with shredded cheddar cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!
