Ingredients:  

Main Ingredients

  • 1 lb Ground Bison
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 1 cup Diced Tomatoes
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Frozen Peas
  • 1 cup Cooked Quinoa
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, cook the ground bison until browned. Drain any excess fat.
  • Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
  • Stir in the diced tomatoes, frozen peas, cooked quinoa, salt, and black pepper. Mix well.
  • Transfer the mixture to a baking dish. Top with shredded cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
