Instructions:
Preheat your oven to 350°F (175°C).
Cook the rice according to package instructions.
In a skillet, cook the sausage over medium heat until browned. Remove and set aside.
In the same skillet, sauté the onion, bell pepper, and garlic until softened.
In a large bowl, combine the cooked rice, sausage, black-eyed peas, chicken broth, diced tomatoes, sautéed vegetables, salt, pepper, and thyme.
Transfer the mixture to a baking dish and bake for 30 minutes.
Serve hot.
