Ingredients:  

Main Ingredients

  • 1 cup rice uncooked
  • 1 pound sausage sliced
  • 1 can black-eyed peas drained and rinsed
  • 1 cup chicken broth
  • 1 cup diced tomatoes canned
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme dried

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Cook the rice according to package instructions.
  • In a skillet, cook the sausage over medium heat until browned. Remove and set aside.
  • In the same skillet, sauté the onion, bell pepper, and garlic until softened.
  • In a large bowl, combine the cooked rice, sausage, black-eyed peas, chicken broth, diced tomatoes, sautéed vegetables, salt, pepper, and thyme.
  • Transfer the mixture to a baking dish and bake for 30 minutes.
  • Serve hot.

This dish is perfect for New Year's Day or any time you want a comforting meal.
