Ingredients:  

Main Ingredients

  • 2 cups dried pinto beans
  • 6 cups water
  • 4 slices bacon, chopped
  • 0.5 pound chorizo, crumbled
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 jalapeño, chopped
  • 0.25 cup cilantro, chopped
  • Salt to taste

Instructions: 

  • Rinse and soak beans overnight.
  • Cook beans in water until tender.
  • In a skillet, cook bacon until crisp. Add chorizo, onion, and garlic. Cook until browned.
  • Add tomatoes and jalapeño. Cook for a few minutes.
  • Add mixture to beans. Simmer for 30 minutes.
  • Stir in cilantro and salt. Serve hot.

Notes:

For a spicier stew, add more jalapeños or use a spicier variety of chorizo.
