Ingredients:  

Main Ingredients

  • 1 lb Cod fillets cut into chunks
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 can Diced tomatoes (14.5 oz)
  • 1 cup Fish stock
  • 1 tsp Paprika
  • 1 tsp Dried oregano
  • to taste Salt and pepper
  • 1 tbsp Fresh parsley chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Stir in diced tomatoes, fish stock, paprika, and dried oregano. Bring to a simmer.
  • Add the cod chunks to the pot. Season with salt and pepper to taste.
  • Simmer for 15-20 minutes, until the cod is cooked through and flakes easily with a fork.
  • Garnish with chopped fresh parsley before serving.

Notes:

Serve with crusty bread or over rice for a complete meal.
