Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in diced tomatoes, fish stock, paprika, and dried oregano. Bring to a simmer.
Add the cod chunks to the pot. Season with salt and pepper to taste.
Simmer for 15-20 minutes, until the cod is cooked through and flakes easily with a fork.
Garnish with chopped fresh parsley before serving.
Notes:
Serve with crusty bread or over rice for a complete meal.
