Instructions:
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the onions and garlic, and cook until softened.
3. Add the carrots, potatoes, beef broth, salt, pepper, and thyme. Bring to a boil.
4. Reduce heat and simmer for 2 hours, or until the meat and vegetables are tender.
5. Allow the stew to cool completely.
6. Spread the stew evenly on dehydrator trays and dehydrate at 135°F (57°C) for 8-10 hours, or until completely dry.
7. Store the dehydrated stew in airtight containers or vacuum-sealed bags.
Notes:
To rehydrate, add boiling water to the dehydrated stew and let sit for 10-15 minutes.
