onion, chopped

garlic, minced

potatoes, diced

vegetable broth

white beans, drained and rinsed

tsp
dried thyme

tsp
dried rosemary
to taste
salt and pepper

kale, chopped
Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add diced potatoes and cook for 5 minutes, stirring occasionally.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
Add white beans, dried thyme, and dried rosemary. Season with salt and pepper to taste. Simmer for another 10 minutes.
Stir in chopped kale and cook until wilted, about 5 minutes.
Serve hot and enjoy!
Notes:
This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
