Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups potatoes, diced
  • 4 cups vegetable broth
  • 2 cans white beans, drained and rinsed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper
  • 2 cups kale, chopped

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute.
  • Add diced potatoes and cook for 5 minutes, stirring occasionally.
  • Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
  • Add white beans, dried thyme, and dried rosemary. Season with salt and pepper to taste. Simmer for another 10 minutes.
  • Stir in chopped kale and cook until wilted, about 5 minutes.
  • Serve hot and enjoy!

Notes:

This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
