Ingredients:  

Main Ingredients

  • 1 lb mixed seafood (shrimp, mussels, clams)
  • 4 cups chicken broth
  • 2 eggs
  • 1/4 cup lemon juice
  • 1/2 cup orzo pasta
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  • Add chicken broth and bring to a boil. Add orzo pasta and cook until al dente.
  • In a bowl, whisk eggs and lemon juice together.
  • Slowly add a ladle of hot broth to the egg mixture, whisking constantly to temper the eggs.
  • Gradually add the egg mixture back into the pot, stirring constantly.
  • Add mixed seafood and cook until seafood is done.
  • Season with salt and pepper to taste.

Notes:

For a thicker stew, you can add a bit more orzo pasta.
