Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic, sauté until softened.
Add the cubed beef and cook until browned on all sides.
Stir in the diced pumpkin, potatoes, and corn kernels.
Pour in the beef broth and bring to a boil.
Add the paprika and cumin, then reduce the heat and simmer for about 45 minutes, or until the vegetables are tender.
Season with salt and pepper to taste before serving.
Notes:
Serve hot with crusty bread.
