Ingredients:  

Main Ingredients

  • 1 whole Rotisserie Chicken shredded
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 1 cup Onion diced
  • 4 cups Chicken Broth
  • 2 cloves Garlic minced
  • 1 tsp Thyme dried
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add diced onions, carrots, and celery. Cook until softened, about 5 minutes.
  • 3. Add minced garlic and cook for another minute.
  • 4. Pour in chicken broth and bring to a boil.
  • 5. Add shredded rotisserie chicken, thyme, salt, and pepper. Reduce heat and simmer for 20 minutes.
  • 6. Adjust seasoning to taste and serve hot.

Notes:

Feel free to add other vegetables like potatoes or peas.
