Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add diced onions, carrots, and celery. Cook until softened, about 5 minutes.
3. Add minced garlic and cook for another minute.
4. Pour in chicken broth and bring to a boil.
5. Add shredded rotisserie chicken, thyme, salt, and pepper. Reduce heat and simmer for 20 minutes.
6. Adjust seasoning to taste and serve hot.
Notes:
Feel free to add other vegetables like potatoes or peas.
