Ingredients:  

Main Ingredients

  • 4 pieces Chicken Thighs bone-in, skin-on
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Chicken Broth
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 can Diced Tomatoes 14.5 oz
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Season the chicken thighs with salt and pepper, then brown them in the pot. Remove and set aside.
  • 3. In the same pot, add the chopped onion and cook until translucent.
  • 4. Add the minced garlic and cook for another minute.
  • 5. Pour in the chicken broth, diced tomatoes, sliced carrots, and celery. Stir well.
  • 6. Add the browned chicken thighs back into the pot along with dried thyme and rosemary.
  • 7. Bring to a boil, then reduce heat and let it simmer for about 45 minutes, or until the chicken is cooked through and tender.
  • 8. Adjust seasoning with salt and pepper to taste.
  • 9. Serve hot and enjoy!

Notes:

This stew is great with a side of crusty bread.
