Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Season the chicken thighs with salt and pepper, then brown them in the pot. Remove and set aside.
3. In the same pot, add the chopped onion and cook until translucent.
4. Add the minced garlic and cook for another minute.
5. Pour in the chicken broth, diced tomatoes, sliced carrots, and celery. Stir well.
6. Add the browned chicken thighs back into the pot along with dried thyme and rosemary.
7. Bring to a boil, then reduce heat and let it simmer for about 45 minutes, or until the chicken is cooked through and tender.
8. Adjust seasoning with salt and pepper to taste.
9. Serve hot and enjoy!
Notes:
This stew is great with a side of crusty bread.
