Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/4 tsp chili flakes
  • 2 sausages, sliced
  • 1 can chickpeas, drained and rinsed 15 oz
  • 1 can diced tomatoes 14.5 oz
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
  • Add garlic and red bell pepper, cook for another 2-3 minutes.
  • Stir in smoked paprika, cumin, thyme, oregano, and chili flakes. Cook for 1 minute.
  • Add sliced sausages and cook until browned.
  • Stir in chickpeas, diced tomatoes, and chicken broth. Bring to a boil.
  • Reduce heat and simmer for 20 minutes. Season with salt and pepper.
  • Garnish with fresh parsley before serving.

Notes:

Feel free to adjust the spices to your taste.
